History

Maldaner’s Restaurant and Catering is one of Springfield’s finest restaurants. If you have visited The Old State Capitol, Frank Lloyd Wright’s-Dana-Thomas House or the State Capitol, you can imagine the wonderful celebrations Maldaner’s was a part of at the turn of the last century and to the present day.

Today, under the guidance of Chef-Owner Michael Higgins, Maldaner’s respects tradition while offering the best of contemporary American fine dining in our historical setting.

Chef Higgins features seasonal local and regional ingredients influenced by Mediterranean composition and preparation.

“I had the salmon salad ($12), a pistachio-encrusted filet of salmon served over a bed of baby greens and mildly spicy noodles with a hoisin dressing. I love hoisin sauce and salmon, so the two together are a great combination. I also really enjoyed the flavor and texture of the pistachios with the hoisin dressing. For my brother, the meatloaf was very moist, and the fries were crispy and seasoned well.”

“The menu reads like a tribute to an earlier era. Beef Wellington (served with truffle sauce), bread pudding and calves liver are old-school Illinois dishes, but you’ll struggle to find them anywhere but Maldaner’s. Port or after-dinner liqueurs like Drambuie and Grand Marnier complete the experience, by the end of your meal, you’ll be one smoking jacket away from becoming a 1920s Illinois gentleman.”

Michael Higgins, chef at Maldaner’s since the 1980s and owner since 1995, introduced gourmet touches to the dinner menu, although lunch offerings tend more toward the traditional. Higgins also added a rooftop garden that provides some of the restaurant’s fresh vegetables and herbs; beehives on the roof also provide honey for Maldaner’s dishes.

In a nod to Maldaner’s beginnings as a confectionery and ice cream parlor, however, the dessert list still includes homemade lemon sherbet, “a 120-year-old tradition … inspired from Mary Todd Lincoln’s original recipe.”
