Pumpkin Cheesecake

One Cake
Nine inch springform pan

Crust

        • 3/4 C…..Gram cracker crumbs
        • 1/2 C…..Chopped pecans
        • 1/4 C…..Light brown sugar
        • 1/4 C….. Sugar
        • 2 OZ…..Butter

Combine dry ingredience. Add hot melted butter. Press into pan and chill one hour.

Filling

        • 1 1/2 C….Pumpkin Puree
        • 4 Eggs
        • 1 1/2 Teas….Cinnamon
        • 1/2 Teas….Ground Ginger
        • 1/2 Teas…. Salt
        • 1/2 C…. Brown sugar
        • 24 OZ…. Cream cheese (Soft and cut into small cubes)
        • 1/2 C…. Granulated sugar
        • 2 T…. Heavy cream
        • 1 T…. Cornstarch
        • 1 Tea…. Vanilla
        • 1 T….. Bourbon (Opt.)

Mix together pumpkin, eggs, spices, salt and brown sugar. Set aside cream together cheese, granulated sugar. Beat in the cream, cornstarch, vanilla. Add the pumpkin mixture and beat until smooth. Pour into crust and bake at 350 degrees approx 50 min.

Topping

        • 2 C….Sour cream
        • 2 T….Sugar
        • 2 Tap vanilla or 1 T. Bourbon

Spread on top of the cake. Bake 5 min. Chill over night
